Marcy and Ellie Nesselroade, the current owners of Ironworks, selected the Freemans to carry on their legacy because of their shared ideals and culture. “Our mission in creating Ironworks has always been to give back to Springfield and help build up our city. Dan and Lisa Freeman are the perfect people to continue to carry out that mission”, said Marcy Nesselroade.
Le Torte Dolci Bakery was founded in 2017, followed by Salato Deli in 2018 and Crust & Company in 2020. These businesses have become known for their commitment to using high-quality ingredients, providing exceptional service, and being dedicated to their local communities. The owners are thrilled to bring their passion for food and hospitality to Ironworks Waffle Café.
Ellie Nessleroade said, “While we are sad that this chapter of our lives is coming to an end, we could not be more thrilled that Ironworks will continue to be a staple of our city.” After opening in 2020, Ironworks Waffle Café quickly became a beloved establishment in the community, known for their delicious, made-from-scratch waffles and friendly service. The new owners plan to continue this tradition by maintaining the same menu and customer service standards that Ironworks customers have come to expect.

The purchase of Ironworks Waffle Cafe is a natural expansion for Le Torte Dolci Bakery, Salato Deli, and Crust & Company, who share a vision of creating unique culinary experiences that bring people together. The addition of Ironworks has prompted the new owners to create an “umbrella” brand – Amichi Collective. Amichi means “friends” in Italian, and the Freemans consider their customers their friends. “We want to offer you an experience that you would be proud to offer your friends”, said Dan Freeman.
The transition is expected to be smooth, with very little disruption in service for customers. Ironworks Waffle Café will remain open during the transition, generally maintaining the Friday & Saturday hours. Operating hours and days will expand in the weeks following the transition. The new owners ask for patience and support as they work to maintain and build up service.
